Tortilla Soup submitted by Jane Franks

2 cups chicken breast, diced

1 onion, chopped

1 bell pepper, chopped

2 cans chicken broth

1 can shoe peg corn

1 jar stricklands salsa

1 tsp cumin

1-2 tsp. chili powder

1 tsp. cilantro or 2-3 tsp. fresh cilantro, chopped

Saute chicken, add onions, and peppers. Cook until tender and add remaining ingredients. Simmer for 10 minutes adjust seasoning if necessary. Serve with avocado, sour cream and lime chips.
